Avoid wastage! Use your leftover turkey and gammon to make a comforting and delicious pie...
What do you do with your leftover turkey and gammon? I make mine into a delicious pie.
I absolutely hate the turkey and gammon going to waste, and I think it’s really lovely to make a warming, delicious and moreish pie. When you’ve been outside for a cold walk, it’s really yummy to come in and enjoy!
Ingredients: Turkey and Ham Pie
50g Butter
3 leeks finely sliced
2 tablespoons ofplain flour
700g cooked turkey and ham leftovers cut into 2cm chunks
100ml Stock
100ml Milk
Left over gravy
Salt and pepper
225g Puff Pastry
1 free range egg beaten
Method:
Heat the butter in a large sauté pan. Add chopped leeks,salt and pepper and sauté gently without browning for a few minutes.
Sprinkle over the flour, mix in and cook for a few minutes.
If you have any leftover gravy add this now, if not slowly add in the stock, gradually and stirring all the time, then do the same with the milk. You may need to add a little more liquid if it’s too thick. Let it cook through for a few minutes until it is the perfect consistency.
Put the meat into a ceramic pie dish, with a pie funnel orupturned egg cup and pour over the sauce, mix together and set aside.
Roll out the pastry on a floured work surface, so it's larger than your dish and place on top, so the pastry folds over the top. Carefully trim off any excess leaving 2-3cm over hang around the dish, pinch the pastry around the edge gently pushing it into the dish and brush with the beaten egg.
Place in the oven and bake for approx. 40 mins (be very careful that the pastry doesn’t burn) at 200C.
Can be reheated and/or frozen.
