Set yourself up for the day with my homemade granola!
Mornings are quite a stressful time in the Gray household. Getting the children up and ready for school, ensuring they have a good breakfast and are set up for the day, plus trying to have a great breakfast myself can be a bit of a juggling act!
So to take one less stress away and tick all those sustenance (and taste!) boxes first thing, I tuck in to a bowl of my homemade granola - packed full of goodness.
I have mine with greek yoghurt & lots of fresh berries.

You will need:
500g Jumbo rolled oats
2 tbsp Coconut oil
2 tbsp Agave Nectar
1-2 tbsp honey
100g mixed seeds (sunflower seeds, pumpkin seeds,sesame seeds, linseed)
50g Almonds flaked or whole
30-50g Chia seeds
75g raisins
Method:
To prepare, heat your oven to 160 C or use the baking oven on an Aga.
Melt the Coconut oil, honey, and agave nectar on a low heat for a few minutes
Put all the oats, nuts and seeds into a large bowl
Pour the melted oil over the oats, nuts, and seeds and mix well
Spread out over a lined baking tray
Put into the oven at approx. 160 degrees C for 10-15 mins
Halfway through take it out of the oven and mix it around to make sure it's cooking evenly
Take out of the oven and add the raisins, again mix them in and turn the granola
Cook just for a couple of minutes and then take out of the oven and allow to cool
Once cool, store in an airtight container and use within a few weeks.
I enjoy mine with Total Fage 5% Greek yoghurt with berries
