Merry & bright braised red cabbage with apple & orange!
Not only is a big steaming bowl of red cabbage completely delightful to look at with its vibrant colours and lovely texture, but it also tastes divine with the addition of apples and orange.
You can make this ahead of your event and pop it into the freezer too!
You will need:
2 tbsp extra virgin olive oil
1 Medium red cabbage, chopped
4 cooking apples
2 onions, chopped
2 oranges, juice & rind
4 tbsp red wine vinegar
1 heaped tsp sugar
Salt & pepper
Method:
Heat the olive oil in a large saute pan or roasting tin. Add chopped onion and cabbage, then saute gently without browning.
Peel, core and slice the apples, then add them to the cabbage & onion. Add the salt, pepper, sugar, red wine vinegar, orange rind, orange juice and 2-4 tbsp of water.
Bring to the boil.
After 5 minutes reduce the heat and simmer gently in the Aga for at least 1 hour, electric fan oven at 140C or gas mark 2 for 1-1.5 hours.
Either serve with your dinner right away, or pop into sandwich bags to freeze up in preparation to enjoy another time!
