In today's video, I'm thrilled to share with you one of my all-time top recipes – Aubergine Parmigiana. This dish is an absolute favourite of mine, and I can't wait to show you how to make it.

My love for this dish started back in my younger days when I first tasted Chicken Parmigiana at a restaurant in Los Angeles with my cousin. The flavours of Parmesan, mozzarella, and tomato left a lasting impression on me, and now, I've adapted the classic recipe to create a delicious version that incorporates the wonderful flavours of fresh aubergine.
